About these Cookies
No bake cookies deserve an award because who doesn’t love cookies that can be whipped up and chilled until you're ready to eat? It's brilliant!
However, most no bake cookies are made with nut butter, which are no good for my nut free people. So, I decided to make no bake cookies with no nut butter!
Instead, these No Bake Chocolate Oatmeal Cookies without Peanut Butter feature Oat Haus cookie dough granola butter which is made from gluten-free oats. I could eat this granola butter by the spoonful. It's SO GOOD and brings so much sweetness and flavor to these treats.
To make these cookies, all you need to do is melt down some ingredients on the stovetop, add oats, shape, and chill. Enjoy your cookies with a cold glass of milk or scoop of ice cream!

Recipe Ingredients

- Butter: We'll use 6 tablespoons of butter for this recipe. It gets melted down and then once the cookies chill it sets and holds the oats together.
- Chocolate Milk: I used Fairlife Chocolate Nutrition Plan to sneak in some extra protein!
- Cocoa Powder: To make our cookies extra chocolatey.
- Oats: I used rolled oats. Steel cut won't give a great texture.
- Cookie Dough Granola Butter: I love this granola butter from Oat Haus. I could eat it with a spoon right from the jar! Code COURTNEY15 saves you $$!

1. Heat a sauce pan to medium heat and add butter, cane sugar, chocolate milk, and cocoa powder. Allow the butter to melt completely and sugar to fully dissolve. Whisk together until you achieve a chocolate syrup.

2. Next, add cookie dough granola butter and vanilla extract and continue whisking. Let it come to a boil before removing from heat. Pour cooking oats into the sauce pot. Stir until oats are thoroughly covered.

3. Then, line a baking sheet with parchment paper. Using a cookie scooper, scoop no bake chocolate oatmeal cookies and place onto a baking sheet. Allow cookies to set in the fridge for 1-2 hours or freezer for 30 minutes. Enjoy!
Recipe FAQs
How do you store these cookies?
Once the cookies have solidified, you can store them in an airtight container on the counter for 5-7 days or in the refrigerator for up to 2 weeks. They can also be frozen in a sealed baggie for up to 3 months.
Why are my no-bake cookies chewy?
These cookies should not be chewy. Make sure the chocolate sauce comes to boil before adding the oats. This'll cook the oats down a bit so you're not eating raw, chewy oats after the cookies set.
Any tips for success?
Using a cookie scooper is KEY for equal sized cookies! Also, keep the heat on the saucepan relatively low to avoid burning.
Can I include mix-ins?
Yes! I recommend adding chopped nuts, marshmallows, dried fruit, seeds, or shredded coconut. To intensify the chocolate flavor, you can add a ¼ teaspoon of espresso powder. Whatever, you choose, don't add more than ½ a cup or the cookies will not hold together properly.
Can I make them dairy free?
Yes! Use coconut oil or vegan butter in place of the regular butter and sub almond milk in place of the chocolate milk.

Ingredients
- 6 tablespoons butter
- 2 cups cane sugar
- ½ cup chocolate milk
- ¼ cup cocoa powder
- ¾ cup Cookie Dough Granola Butter
- 1 tsp vanilla extract
- 3 cups cooking oats
Instructions

Next, add cookie dough granola butter and vanilla extract and continue whisking. Let it come to a boil before removing from heat.
Pour cooking oats into the sauce pot. Stir until oats are thoroughly covered.
Then, line a baking sheet with parchment paper. Using a cookie scooper, scoop no bake chocolate oatmeal cookies and place onto a baking sheet. If you kitchen is warm or particularly humid, allow the cookies to set in the refrigerator.
Chill for 1-2 hours. Enjoy!

Notes
