Well folks, another summer has come to an end, and it looks like I only have thirteen summers left before my kids are adults . . . But who’s counting! Ok, I digress, but seriously, right after summer comes Halloween. It's just around the corner. During this upcoming candy crazy season, I love to give different options to have around. I’ve decided that now is the perfect time to share this delicious recipe for no bake cookie dough bites with sprinkles!

Just in time for the holidays and an easy after school treat. These edible cookie dough recipe is a protein-packed, no-bake treat you can share with the kids as they settle into the new school year, and they can be made even healthier by leaving out the sprinkles. But again, who’s counting! C’mon, they are sprinkles after all.

First, you'll want to dust off that stand mixer and use it! Cream together solid coconut oil, almond flour and maple syrup. Beat on medium speed, for about 1 minute until ingredients come together and are smooth. It will look like a smooth tan dough.

Then you'll need to form the dough into 1-inch balls. This is a great time to put the kids to work. I mean, give them something to do. These summer months are long and this is a fun activity for them. The next step is optional, but makes it super fun! Pour sprinkles in a small bowl. Then dip balls into the sprinkles, coating the entire outside. By the way adding vanilla extract may lead to a bitter flavor, so I don't suggest doing it. It really depends how much batter you have and what brand extract. But, it tends to be bitter, if those little ones get a hold of it and try it.

Now that you have these dough balls formed and sprinkled, you'll have to wait. Can you believe it? You're free to eat it, but this next step is worth the wait. Literally, the hardest part of this recipe is the wait. Not to worry, it's just half an hour before you and the family can devour these! Chill these dough balls in the refrigerator for at least 30 minutes before serving. They taste the best when chilled. You can make them into the perfect small bite size pieces for little ones too.
