This eggless cookie dough recipe makes a delicious single serving cookie dough in about five minutes. All you do is measure the ingredients, microwave the flour, then stir everything together!

Before starting, you'll want to heat the flour in the microwave for 30 to 60 seconds. It should reach a temperature of at least 160°F to kill off any bacteria that may be present.

  • 3 tablespoons packed brown sugar
  • 2 tablespoons butter softened
  • ¼ teaspoon vanilla extract
  • 1 pinch salt optional
  • ¼ cup all-purpose flour

      OMG!!! this sounds SO GOOD!!! i am so glad i found your "Little Bit Recipes" site!!! i live alone and pretty much never cook for anyone but myself ever! maybe once or twice a year i will cook for my son his wife and my little 6yr old grandson. i do cook for my grandson 4-6 days a week (he comes here after school) but usually he will only eat egg rolls, meat, tater tots, green beans, pizza, or mc donalds! he won't eat anything sweet except ice cream lol odd i know!! but i crave savory comfort food and deserts..you know, NORMAL food lol but cooking for 1 just isnt much fun...you always have too much left overs a lot of which doesnt reheat well if you freeze it, or you just dont have room to freeze it! so im really looking forward to trying so many of your recipes! im gonna try the 4 roll dinner roll recipe asap, but im gonna try this chocolate chip cookie dough TODAY!!! i will post my review as soon as i taste it! if i can post a pic i certainly will!

      Well...I made it! I must say...its pretty darn good! Next time I think I'll double it and keep most in the freezer in about 2 ice cube-sized servings...just for simplicity. I will say a little goes a long way. One batch will last me several sittings! This is very good and I love cookie dough lol this will now be my "won't get sick" yummy, and "can eat any time I want to" cookie dough!!! Thanks for the great recipe!!! I look forward to trying many others on this site!

    Can I sub with almond flour or coconut flour. I have already tried a few Little Bit Recipes and love them. It is good to not have a freezer full of 6 or 8 servings. I am a widow and these are perfect. I am also a Keto lifestyle and combine the two so easy.

      Almond flour would be the best option for a one-for-one swap. If you want to try coconut flour, you'd need to use about a third or half of the amount, so add it slowly. Also, you don't need to heat almond flour or coconut flour so you can skip that step.
